Location: Cordillera, Volcán, the Valley of Clouds a unique place on the elevated slopes of the Barú Volcano at 1,700 masl, less than 31 miles from the Pacific Ocean and the Caribbean Sea which renders a unique thermal exchange over rich volcanic soils where our coffee grows in a one of a kind environment in the world.
Producer: Mil Cumbres of Mario Fonseca Imendia
Process: Natural.
When we finish picking at the end of the day, the cherries (only red Ferrari color) are washed in tanks and their floats removed, then placed at a clean table to select cherries by hand in our process facilities.
The water we use at Mil Cumbres comes from an artisan spring located at 2,000 meters within the Volcán Barú National Park boundaries. Is a pure, completely natural, clean and crisp water.
Then slowed dried for the next 30-40 days in the African beds (thickness of inch and a half at the most per square), the temperature of the location is 26C the highest and the lowest at night is 12.5, averages 17 degrees. Humidity it is controlled via solar panels, since we don’t have electrical power, we can say we are green!
We do not pour, use, intervene or by any means use accelerators or fermentation’s processes, or fruits, malt or yeast, literally nothing.
Our naturals where all processed at Mil Cumbres at 1720 masl, therefore the slow drying process and high altitude of the plantation brings lots of fruity notes plus florals.
The coffee is to share.
