In the vibrant heart of Panama’s Volcán region, Flying Pumas is more than a coffee project — it is a living ecosystem where specialty coffee and wild nature thrive in balance. Based at Finca Los Pozos, this initiative was born from a vision of transformation: to restore and protect the land, while crafting coffees that express its true potential. What once was underutilized terrain is now a carefully cultivated sanctuary — a place where native trees provide shade, biodiversity flourishes, and the spirit of big cats still roams. Located between the Barú and Colorado volcanoes in Chiriquí, the farm benefits from fertile, mineral-rich soils and a microclimate shaped by its latitude (8° 45’ N), constant mist from La Amistad Park, the Bajareque effect, and unique light patterns throughout the year. Situated at 1800 meters above sea level, these conditions allow for slow cherry maturation and high sugar development, resulting in complex and elegant flavor profiles. At Flying Pumas, conservation is at the core. Of the total estate, 60 hectares are devoted to coffee and 120 hectares are preserved for natural regeneration and wildlife corridors. This decision is part of a broader commitment to agroecology and biodiversity, supported by practices such as shade reforestation, natural pollination, and protection of local species including jaguars, ocelots, and the pumas that give the farm its name. The farm’s focus is on Geisha, which makes up over 80% of the planted varieties, with additional plots of Typica, ET47, Catuai, Sidra and Orange Bourbon, among others. Agronomic practices are based on precision and sustainability — from optimal planting densities (~2086 plants/ha), to selective pruning, micro-fermentation protocols, and slow drying under shade. Each process is designed to enhance the inherent characteristics of the coffee and respect the surrounding ecosystem. Flying Pumas represents a modern, regenerative approach to specialty coffee. Here, excellence is rooted in soil health, scientific detail, and a deep respect for nature — all working together to create coffees that are as meaningful as they are memorable.
