The result is a cup that expresses refined white floral aromas, jasmine and coffee blossom complemented by vibrant tropical fruits, blueberry, peach, and citrus flavors—an elegant and complex profile.
Grown at our Los Alpes Estate, this natural process coffee was meticulously harvested and initially sorted using a mechanical siphon, followed by flotation to ensure uniform cherry selection. It then underwent 48 hours of anaerobic fermentation, enhancing its complexity and depth. Drying was conducted through a carefully managed combination of sun drying and slow mechanical drum drying, ensuring long-term stability and preserving the integrity of its intricate flavor profile.
